A vibrant, herbal-citrus mocktail that’s lightly complex but easy to make.

Ingredients (per drink)

  • 3 oz Citrus-Hibiscus Tea Infusion (recipe below)
  • 1 oz Rosemary-Honey Simple Syrup (recipe below)
  • 1 oz fresh citrus juice orange or mandarin or Citrus Super Juice (recipe below)
  • 2 oz soda water (to top)
  • Ice

Rosemary-Honey Simple Syrup Recipe

  • ½ cup honey
  • ½ cup water
  • 2 sprigs fresh rosemary

Method:

→Combine honey and water in a small pot over medium heat.

→Add rosemary sprigs, simmer 3–4 minutes until fragrant.

→Remove from heat, let steep 10 minutes, then strain and cool.

→Store in the fridge (up to 2 weeks).

Citrus-Hibiscus Tea Infusion Recipe

  • 2 hibiscus tea bags (or loose-leaf hibiscus)
  • 1 cup hot water
  • Zest of half an orange

Method:

→Steep hibiscus tea with orange zest in hot water for 5–7 minutes.

→Strain and chill.

Citrus Super Juice Recipe (optional, regular orange juice is ok too)

  • 1 Large Navel Orange or 2 Mandarin Oranges, washed
  • 1 cup water
  • Sugar or sweetener to taste

Method:

→Wash fruit thoroughly, cut into quarters, peel ON.

→Blend fruit with water at high speed in a blender.

→Strain to remove peel and pith pieces.

→Sweeten to taste (or just add extra syrup when making the mocktail).

→Store in the fridge (up to 1 week).

Mocktail Assembly

  1. In a shaker with ice, combine hibiscus infusion, juice, and rosemary-honey syrup.
  2. Shake until well chilled.
  3. Strain into a stemless wine glass filled with fresh ice.
  4. Top with soda water for a gentle sparkle.

Garnish

  • Orange wheel or twist
  • Small sprig of rosemary for aroma

Flavor Profile

Bright, tart hibiscus + mandarin/orange, balanced with honey sweetness and an herbal rosemary backbone. Refreshing, sophisticated, and not overly sweet.
